Owner Nobu Kawaguchi has spent thirty-five years mastering chicken sourcing, and Yakitori YAMATO shows it: the restaurant maintains its own dedicated coop at a contracted poultry farm and secures rare-breed birds available only once a year through exclusive industry connections. Selected for the Tabelog Hyakumeiten’s yakitori WEST ranking every year from 2018 through 2025, the Kitashinchi restaurant serves a course-only format with optional a la carte grilled additions. Reservations are required for an evening built entirely around ingredient rarity and patience.
