Yakitori Shidare (鳥旨 しだれ)

Reopened in January 2025 in Osaka’s Kitashinchi district, Yakitori Shidare was almost immediately selected for the Tabelog Hyakumeiten’s 2025 yakitori WEST ranking. Working with poultry farmer Naoya Shinoshima, the kitchen builds its reservation-only omakase entirely around Kyoto Tei chicken and Kishu duck, serving the course in two contrasting movements meant to evoke restraint and refinement. The restaurant takes its name from a Japanese expression about ripening rice bowing under its own weight, a philosophy reflected in its quiet, understated two-seating dinner service.
