Owner Keita Morimoto went independent in 2009 and opened Yakitori Morimoto in the Haruyoshi entertainment district in 2019, earning Michelin recognition alongside back-to-back Tabelog Hyakumeiten yakitori WEST selections for 2024 and 2025. The kitchen specializes in Toyono Shamo, a heritage breed from Oita Prefecture, grilled over Hinata binchotan charcoal from Miyazaki. The intimate counter restaurant, which includes one private room, operates on a strictly reservation-only basis just steps from Tenjin-Minami Station.
