In Nishi-Shinsaibashi, Osaka, Shojin Sushi Minamo is a fully vegan and fully gluten-free sushi restaurant built on Buddhist shojin-ryori techniques, serving plant-based nigiri and rolls at a compact six-seat counter. Orders are placed by smartphone from a QR-code menu, and reservations are recommended given the limited seating. It is open Monday, Tuesday, and Friday through Sunday from noon to 2:00 PM and 5:30 PM to 9:00 PM, and closed Wednesdays and Thursdays. It is about a 3 to 10 minute walk from Shinsaibashi Station.
