Shinasobaya Honten is a legendary shop in Japanese ramen history, founded by the late Minoru Sano — a towering figure in the ramen world widely known by the nickname “Ramen no Oni” (the Demon of Ramen) — who is credited as a pioneer of the high-end, ingredient-driven shoyu ramen movement that reshaped how ramen is perceived in Japan. The shop is still run by his family near Totsuka Station and remains a pilgrimage site for ramen fans. Closed Wednesdays.
