Itaru Honten (いたる 本店)

One of Kanazawa’s most iconic and enduring izakaya, open since 1988 and widely regarded as a training ground for the city’s izakaya scene. Guests gather around the counter for theatrical sashimi presentations served from towering wooden barrels, paired with sake drawn straight from brewery tanks. Since the Shinkansen’s arrival, it has become a bucket-list stop for visitors while still holding onto its loyal local following, so reservations are strongly recommended. Closed Sundays.
