Ginza Shimada is widely regarded as one of Tokyo’s most refined standing bars, a tachinomi kappo offering genuine Japanese kaiseki-level cooking at casual standing-bar prices, with roughly 15 rotating hot dishes and 10 appetizer-style items served daily. It was founded in January 2012 by a chef who trained for a decade in Kyoto and later worked at a Michelin three-star restaurant before striking out on his own, deliberately choosing a standing-bar format to keep using premium ingredients without the overhead of a full sit-down restaurant. The compact room, with earthen walls and a marble counter, seats around ten standing plus a small table. It is now operated under the well-known Oreno restaurant group’s Oreno Kappo sub-brand, a short walk from Shimbashi Station in Ginza.
