Gingyo (吟魚)

The original flagship of Toyama’s Gingyo mini-empire, this is the seafood izakaya that built the brand’s reputation, and its reservation line is legendarily hard to get through. Expect pristine Toyama Bay fish, a deep list of local sake, and attentive staff who walk diners through each dish. It is the home base from which the more casual annex, Gin-chirori, and other sister shops spun off. Closures are irregular rather than fixed.
