Ganja Honten is widely regarded as a pioneer of Japan’s rich pork-bone-and-seafood (gyokai-tonkotsu) tsukemen dipping-noodle style, and is frequently cited as one of the most influential tsukemen shops in the country since opening in 2000 near Hon-Kawagoe Station. Cash only; the shop closes as soon as the day’s soup and noodles run out.
