AKAI is an eight-seat counter restaurant in a renovated eighty-year-old house near Miyajimaguchi Station in Hatsukaichi, Hiroshima. Chef Kenji Akai describes his cooking as deliberately “no genre,” building a ten-course tasting menu that draws out the pure essence of each ingredient, served on custom-made tableware shaped to match the plating.
