Hibi Shushu is a casual standing-sake bar about five minutes on foot from the east exit of Omiya Station in Saitama, opened in August 2024 in a small shopping arcade. Its signature feature is a self-service sake and shochu system: guests pick a bottle themselves from a refrigerated case stocked with dozens of labels, the owner pours, and the bottle is returned to the case, keeping drinks affordable. The all-in-house food menu rotates seasonally around creative single-portion Japanese small plates, with sardine nori rolls as a signature dish.
Selected for Tabelog’s 2025 standing-bar Hyakumeiten, the shop saw a surge in popularity after a June 2025 television feature and can get busy without a reservation. Closed days are irregular rather than fixed; checking ahead before a visit is recommended.
