Yakitori Higebouzu (焼鳥 ひげぼうず)

Widely regarded as Hokkaido’s finest yakitori restaurant, Higebouzu is helmed by chef Yosuke Murakami, who trained at noted yakitori and chicken-cuisine establishments before opening this reservation-only counter in Susukino. It is the only shop in Hokkaido serving the rare, prized Kousaka-dori chicken, charcoal-grilled to precise doneness alongside seasonal vegetables from contracted Yoichi farms. With just ten counter seats and an omakase-only course served in two timed seatings, a reservation via Instagram DM is essential.
