Yakitori Kohane (焼き鳥 幸羽)

Yakitori Kohane is a reservation-only omakase yakitori restaurant tucked into an old backstreet near Shin-Hamamatsu Station, which became a nationally sought-after destination almost immediately after opening in 2022. The chef centers the course on Amagi shamo, a resilient, richly flavored game-fowl breed raised in Izu, grilling both male and female birds to highlight their distinct textures and fat content. The omakase progresses through skewers, seasonal dishes made with locally sourced Hamamatsu vegetables and morning-caught poultry, a pastry chef’s house-made baked sweets, and a closing rice or noodle dish. Sourcing is deeply local and sustainability-minded, with the kitchen using nearly the whole bird and partnering with regional farmers in Shizuoka.
